Cássio Yamamoto is no stranger to producing award-winning coffees. Grown in Rio Paranaíba, only miles away from where owner Otávio spent his adolescent years, Cássio’s family has been a reference point for top-quality coffees in the Cerrado Mineiro region (it’s no surprise then that he is a good friend of producer Yuki Minami, whose excellent coffees have been previously featured at Aquarela Coffee).
This Paraíso MG2 cultivar is special: carefully selected and naturally-processed so that a slow, natural fefermentation could take place as it dried, this coffee oozes with an underlying fudge note and is complimented by notes of citrus and a tropical fruit tartness.
Currently tastes like: Fudge, jackfruit, tamarind and honey.
